Tubular heat exchangers-(Figure 4), generally employ concentric tubes as the barrier/ heat exchange surface. The blades, which have a slight degree of independent movement, then "scrape" product build-up off of the heat exchange surface. The inner layers of the metal are thereby compressed so that the gas pressure has first to reverse this compression and then to extend the metal. The gun barrel supported by the contraction of the outer hoops will then be able to endure a gas pressure which can be expressed as being proportional to the initial compression plus the extension, whereas in the old type solid gun it was proportional to the extension only. That left the 3.8-liter 110-horsepower Chevy V-6 as the base powerplant (though Californians once again got a similar Buick-built engine), with options being the 150-horsepower 5.0-liter gas V-8 (standard on wagons) and 105-horsepower 5.7-liter diesel V-8.
Mercury-in-glass thermometers and other temperature indicating devices are the reference instrument and, as the regulations state, shall be tested for accuracy against a known standard upon installation and at least once a year thereafter. The regulations do not require maintenance of calibration records, however, as the reference instrument for indicating the processing temperature it is important that the firm be able to document that required tests for accuracy were accomplished. The pens are adjusted by reading the indicating thermometer and using a thumb wheel on the pen on making adjustments inherent in the particular design. If the system is equipped with only one temperature indicating device, the probe for this device is normally located in the vicinity of the temperature recording device. By counting pump strokes per set time period, or by equipping the pump with a recording tachometer, an indirect record of product flow rate can be documented. In the latter, the pumping rate cannot be changed without dismantling the pump. The design of the system, pumping rates and product characteristics can effect the flow rate through the heating and holding portions of the system. The specified product flow rate should be monitored or verified by the processor as a routine part of the system operation.
The flow meter may be used in conjunction with a fixed rate pump and a flow control valve or with a variable speed pump controlled by the flow meter. However these methods are normally not used on a routine daily basis to verify product flow rates. The product characteristics may determine the type of positive displacement pump used. Some firms may elect to install a flow-diversion system. When the pressure drop in the system is low (less than 150 lbs.) and the product contains only small particles or is homogenous, a rotary positive displacement pump may be used. When the second course consists of a single long tube into which a tapered barrel is driven, as in the system adopted by the English government, the two tubes are treated as a single tube equal in thickness to the two together; but when the second course consists of several tubes shrunk on to the barrel the additional strength, obtained by the initial tension of the shrunk tubes, is sometimes taken account of in the calculation, or the two may be treated as one thick tube. In most cases, a flash chamber is used after the hold tube to evaporate added water, which results in a rapid cooling of the commercially sterilized product.
